Subtle notes of fruit with a caramel sweetness, chocolate aftertaste and velvety texture. Sourced from the Prieto Estate Coffees which began as a vision of a group of farmers in the western and eastern mountain regions of El Salvador.
The El Pilon farm is located in the western part of El Salvador in the Apaneca-Ilamatepec Mountain Region. It consists of an area of 84 hectares, where the temperature all year round is 7-18º Celsius, with fog that gives the coffee a great density and lots of juice when it is hand-picked in a perfect red yellow color.
El Pilon has spectacular views of Eagle Mountain in front and and at the back of the great Bolcano of Santa Ana that in 2005 erupted, covering the coffee plants in ash. The coffee trees lost their leaves but they survived as the family continued to care for them. El Pilon farm got its name from the small coffee plant nursery and is certified by the Rain Forest Alliance, making it sustainable with the environment and wild life.
El Pilon coffee gets to the Eco-Mill, located 20 minutes from the farm where it is processed by a team of workers, assuring the best quality at the papers and washed through a continuous flow aqua-pulper. It is then dried on African beds in the heat of the sun, taking from between 12-18 days.
The coffee is cupped daily before being sent to Prieto Estate Coffees.
